Vegetarian Chili

Recipes Summary : Nothing is better than real meat chili, but now that cholesterol is an issue at my age, I have to make some allowances. This chili helps make the sacrafice.

Prep Time : 30 Mins.
Recipe : Ingredients:
2 10 oz cans of kidney/pinto beans
2 T oil
1 onion, diced
1 large carrot, diced
1 rib celery, diced
1/2 bell pepper, diced
1-2 cloves garlic minced
2 10 oz cans tomatoes, peeled, seeded and chopped
3/4 c tomato puree
1/2 t powdered cumin
1-1/2 t chili powder
Hot Sauce, Salt and pepper to taste

Directions:
Saute the carrots, onions, celery, pepper and garlic in oil for 15 mins. Add the rest of the ingredients and simmer for 5 mins. Add beans and simmer for 15 mins.
